The End of the Beets


I pulled the rest of the beets this week. I'll have to plant a lot more next year. But you can get beets any time you want. Here's a good recipe that uses pickled beets from a jar.

Beet Salad with Apples

1 pound jar of pickled beets (we like Greenwood’s best), drained and cut in strips
2 medium tart apples, peeled and finely diced
2 tablespoon mayonnaise
Tablespoon sugar
¼ teaspoon salt
Freshly ground pepper
2 tablespoons chopped parsley

Mis beets, apples, mayonnaise, sugar, salt and pepper. Toss together lightly. Garnish with chopped parsley. Serves 4 -6
